Easy Pesto Breakfast Frittata

Last night I woke up in the middle of the night with a rumbly in my tumbly and as I drifted back to sleep, I began dream-storming (brainstorming while asleep) about making a breakfast frittata.  My favorite way to prepare eggs is to whip them with a bit of milk, and bake them in the oven.  This produces a very fluffy, delicious alternative to a fried or hard boiled morning meal.  

I'm not sure if that fits the definition of a "frittata", but I'm going with it!

This recipe serves two people, but it's quite easy to adapt for a larger crowd.  Sometimes I make a casserole sized frittata (using a whole dozen eggs) and freeze the leftovers for lazy mornings too!





What You Need
  • 3 eggs
  • 1/2 cup milk
  • Chopped veggies of your choice, I used red pepper and onion this time.
  • 1 tbsp of pesto, which you can buy or make ahead of time.
  • Salt + pepper to taste
  • Bacon

To Do
  • Set your oven to 350 + cook your bacon if desired.
  • Crack your eggs into the dish you plan to bake them in. (Yay for minimal clean up!)
  • Whisk in the milk, salt, and pepper until blended.
  • Add the pesto and mix that in as well.
  • Add the chopped veggies. We want a 3 to 1 ratio of eggs to veggies so it won't fall apart!
  • Add the bacon, broken into smaller pieces if you'd like it incorporated.  If not, hold to the side.
  • Once everything is mixed, it's time to pop this frittata in the oven for 25 minutes or so.
  • To know when it's done, check it by poking a tooth pick, or fork in the center.  If it comes out wet, let it go a bit longer.
This recipe is ridiculously simple, adaptable and delicious, enjoy! :)

Comeback Kid

I'm back!!!  Sorry for that unexpected abscence!  So many things have happened since my last post, I hardly know where to begin. :)

My family has been dismantling our storage unit lately (hence why I've had little or no computer time!), we're going through it all to determine what to keep and what to sell, donate or trash.  Ah, nostalgia! Old family pictures, all of our children's books, antique books, plates, dolls (my family has always loved old things).  More about that later this week, but here's a sneak peak!

Among other things that have happened recently, I got a hair cut!  I hadn't even trimmed my hair for 8 months (I know, I'm horrible) so it felt great to get it cut.  This is also the first time since 4th grade that I've had any sort of bang-- yippee! -^_^-



I love these cobalt blue shorts but out of the high-waisted shorts that I own, they are the least comfy to wear.  Even sitting down for ten minuntes creates quite a wrinkle factor for the rest of the day (as you can see!).

Blogging 101 + Introducing Chico!

As soon as I think that I sort of have this blogging thing figured out, I quickly am reminded that I have no idea what I'm doing.  It's been quite the fun learning experience though and no matter how long this blog lasts, I'm sure I'll always be learning something new. -^_^-  That being said, I'm starting to wonder if I should be creating my posts ahead of time, say maybe a couple days before I post them.  Up to this point, I've been doing all of my posts the day that I post them.  To those of you who have blogs of your own, do you prepare ahead or do everything the day of?



Moving onto my outfit today, I love this pairing but I'm now realizing that I pair pink + green way too often-- I'll have to watch that in the future.  Anyway, this skirt is one of my favorites, the embroidery on the pockets is so dainty!



This necklace was my paternal grandmothers, I love the lariat style but the heart piece tends to slide down every few minutes.  It calls for adjusting throughout the day, but I love it so to me it's worth it. :)  


And...I'm finally introducing Chico!  A few of you have asked to meet him and here he is!  When I first met Chico, it was new territory for me because I've always had large breed dogs (I grew up w/ German Shepherds)-- Chico thinks he is large breed though, so it worked out!


Chico is a 4 year old Chihuahua and though I have known him since he was a puppy, I adopted him three years ago.  I had a friend who bought Chico as a puppy, when that friend and I became roommates I soon discovered that Chico was being neglected and abused.  I took the pup under my wing and when my lease was up, I adopted him.  I think it goes without saying that Chico's original owner and I are EX friends.



He's a really sweet dog most of the time but has some aggression issues with unfamiliar people because he was abused.  One of the things on my summer checklist is to get a trainer for Chico to try and help w/ the aggression.  Otherwise though he's a funny, happy-go-lucky boy who loves the dog-park, his dog-cousin Snickers and puppy-whip (cream) at Starbucks! -^_^-
